Oumph! Smoky Bits Cupcakes
80 g Oumph! Smoky Bits
220 g All-purpose Flour
150 g Sugar
50 g Maple syrup
1 tsp Baking Soda
1/2 tsp Salt
250 ml Plant-based milk
1 tsp Vanilla sugar
1/3 Canola Oil
1 Tbsp (15ml) White Vinegar
50 g Oumph! Smoky Bits
100 g vegan cream cheese room temperature
50 g vegan margarine
4-6 dl confectioners sugar
2 tsp maple syrup
Preheat oven to 180 degrees celsius.
Fry the Oumph! Smoky bits gently in some oil. Set aside.
Mix dry ingredients in a bowl. Add oil, vinegar, maple syrup and plant-based milk. Stir to a smooth batter.
Pour batter into 12 cupcake liners.
Place into the oven and bake for 20-25 minutes. Check the cupcakes at 20 minutes and if a toothpick inserted into the center doesn’t come out clean, then put them back in for a further 5 minutes.
Fry Oumph! Smoky Bits gently in oil. Let cool.
Mix vegan margarine, vegan cream cheese and maple syrup to a creamy mixture. Add the confectioners sugar, one dl at a time until the frosting is nice and fluffy.
Frost cooled cupcakes the way you like it. Sprinkle the Oumph! Smoky Bits and pour a little bit of maple syrup over the cup cakes. Yum!
