Oumph! Kebab Skewers with Chimichurri

Serves 4


280 g Oumph! Kebab Spiced
2 red onions, cut in to wedges
8 cherry tomatoes, for the skewers
2 pieces of small tomatoes on the vine
1 lemon
8 + 8 tbsp chimichurri sauce
A handful of fresh coriander
2 tbsp olive oil
4 dl basmati rice
20 g coconut flakes
1 lime, washed, zest grated and juice

Chimichurri sauce
2 green chillies, e.g. jalapeño
1 dl fresh oregano
1 dl fresh parsley
1 lemon
1 dl olive oil
0.5 tsp salt
2 cloves of garlic


Chimichurri sauce
Press the garlic in a blender. Add the rest of the ingredients and mix until the sauce is almost smooth. Taste and add more chilli to taste.

Thread the Oumph! Kebab Spiced, onion and cherry tomatoes on skewers. Grill the skewers, the tomato vines and the lemon Toast the coconut flakes. Grate the lime zest. Squeeze the lime and with the rice. Top the cooked rice with the lime zest and toasted coconut flakes.
On a large serving plate, place the skewers, tomato vines and lemons, and spoon over chimichurri sauce. Garnish with coriander and oregano. Serve with the rice and the rest of the chimichurri sauce.
