Oumph! Gnocchi

Serves 4


1 pack Oumph! Smoky Bits (180 g)

500 g potato gnocchi

250 g cherry tomatoes

200 g fresh spinach leaves

2 garlic cloves

250 ml vegan cream

1 plant-based stock cube

1 – 2 tbsp lemon juice

Plant-based cooking oil

Plant-based margarine

Salt and ground black pepper to taste


Fry the Oumph! Smoky Bits until crispy and a nice colour. Cook the gnocchi according to the instructions on the packet and (if you like, but not essential) fry them in a little plant-based margarine until they’re a golden colour.

Peel and slice the garlic into thin slices and cut the tomatoes in to small pieces. Fry the garlic until golden and then fold two thirds of the spinach into the frying pan  and add the cream.

Cook for a few minutes while stirring and add lemon juice, salt and pepper to taste. Fold the gnocchi in to the mix.

Serve topped with tomatoes, Oumph! Smoky Bits and the rest of the spinach.
