Oumph! Ćevapi Skewers with Spicy Relish & Grilled Lemon

Serves 4

Ingredients

1 pack of Oumph! Mince (450 g)
8 garlic cloves, crushed
20 ml Japanese soy
A pinch each of ground thyme, oregano, cumin and black pepper.  
120 ml plant-based yoghurt (optional)
25 ml fresh flat leaf parsley, chopped
1 spring onion, finely chopped
4 large pita breads or flatbreads

Yoghurt dip:
120 ml natural plant-based yoghurt
250 ml flat leaves parsley, chopped
1 spring onion, finely chopped

300 ml Ajvar relish
150 ml plant-based yogurt
Chopped flat leaf parsley and finely chopped spring onion (for decoration)
4 lemon halves, grilled – to serve

Instructions

Defrost the Oumph! mince until it’s soft and malleable.
Mix all the skewer ingredients and shape into 8 skewers. Grill on medium heat for about 3 minutes.

Mix all the ingredients for the yoghurt dip.

Warm the pitta breads or flatbreads. Place a little ajvar relish in the middle of the bread and top with the yoghurt dip. Place the Oumph! skewer on top and sprinkle with chopped fresh leaf parsley and spring onions. Serve with the yoghurt dip and grilled lemon halves on the side.
