Christmas Seasoned Baby Back Oumph!

Serves 4


280 g Oumph! The Chunk (or 250 g Oumph! The Filet)

2 cm fresh ginger

1 garlic clove

Juice and peel of half an orange

100 ml ketchup

100 ml light soy sauce

5 star anise

1 cinnamon stick

100 ml maple or golden syrup


Mince the ginger and garlic. Add all the ingredients to a pan and simmer for around 10-15 minutes. Remove the Oumph! The Chunk and place in a separate bowl. Keep the marinade to one side.

If you’re using Oumph! The Chunk, skewer the Oumph! The Chunk pieces. Place the Oumph! on a baking tray and place under a hot grill (approx. 240 C/Gas mark 9).  With a basting brush, baste marinade over the Oumph! every so often to achieve a delicious, sticky, glazed surface.
